Scott’s, Food, and a Life Well Lived: The Legacy of Buzz and Carolynn Burt

Carolynn and Wesley “Buzz” Burt: A Dynamic Duo of Heart, Service, and Community

Carolynn and Wesley “Buzz” Burt were more than just a married couple—they were a team. A dynamic duo. A fixture in West Valley City whose contributions are still felt today. From the time they attended school together to building a life of love, entrepreneurship, and public service, they were always side by side—building not just businesses, but community.

In 1961, the Burts moved to West Valley City and quickly began to shape the growing community. Over the years, they operated a gas station, a carwash, and their most beloved venture—Scott’s Drive-In on 3500 South. For over 35 years, the iconic A-frame building became a local landmark, famous for its warm service, mouthwatering food- their “Mushroom Thing” was famous.  The “KaySaDeA” was a rectangle hamburger with special red sauce on a tortilla, and it was legendary. A perfect burger would be the “Great Scott” which had 2 meat patties, bacon, cheese, onion and Scott’s famous spices. There was even a tree growing right in the middle of the restaurant—a favorite talking point for loyal customers.

Scott’s wasn’t just a restaurant—it was a rite of passage. For decades, teenagers worked their first jobs there. Families made it a tradition after football games or church meetings. Thousands were employed under the caring, watchful eyes of Buzz and Carolynn, who took genuine pride in each employee and every meal served. Though the building now houses a finance company, every time locals drive past, they can still “taste the fries,” “smell the burgers,” and remember the laughter echoing from inside.

Carolynn’s leadership extended far beyond the drive-in. She was a lifelong champion of youth swimming in Utah, starting with her grandson and rising to national recognition. Her dedication led her to officiate at U.S. Olympic Trials and serve on the Utah Swimming Board of Directors for over two decades. In 2010, she was honored with the Maxwell Award of Excellence from USA Swimming—just one of many recognitions for her tireless advocacy.

But perhaps her most lasting civic impact came through her public service. From 1998 to 2011, Carolynn served three terms on the West Valley City Council, representing District 1. Known for her fierce advocacy, bold voice, and no-nonsense leadership, she championed parks, arts, and youth programs, often backing her convictions with personal donations. “I’m not a wallflower,” she once said—and anyone who knew her could testify to that.

Carolynn passed away in 2012, leaving behind a legacy that is both broad and deeply personal. Buzz, her constant companion and co-creator of their life’s work, remains a beloved figure in the community. Together, they built more than businesses—they built traditions, opportunity, and joy for generations of West Valley residents.

Carolynn once said, “Tell everyone… I just aged up,” echoing the swimming world’s term for advancing to the next level. Her life, full of depth, dedication, and love, is a model of exactly that: continual progress, with a heart full of service.
